You know I love Trader Joe's and I am sure you do too! I love discovering new products there and trying new things. I read about their Amba Mango sauce somewhere (that I now forget) and decided to try it. Holy cow, I am so glad I did. This meal I have for you today was begging for this yummy sauce!
It is a little tangy, a little sweet and a tiny bit spicy; but not really. I mean in a very mild curry way. This made my chicken thighs explode with flavor and made kale great again. Next time you are at Trader Joes, pick this little package up. It can be used as a salad dressing, marinade, sauce for your veggies or protein; the possibilities are endless. Oh and this little recipe I made up for it is pretty darn good and should be on your weeknight dinner list! Full recipe after the montage.

Olive oil and salt and pepper
4 bone in, skin on chicken thighs
1/2 an onion, sliced
3 cloves of garlic, minced
1/4 cup white wine or chicken broth
2 cups chopped kale
As much Trader Joe's Amba Mango sauce as you would like.
Heat about a tablespoon of olive oil on medium in an oven proof skillet. Season chicken thighs with salt and pepper. When oil is hot, add chicken skin side down and let cook untouched for 7 minutes. Flip over and repeat. Place on a plate and stick it in the microwave to keep warm. Heat oven to 375. Add the onions to the skillet and cook until they are translucent and starting to caramelize. Add garlic and cook a minute or two until fragrant. Add wine or broth. Then add in kale and stir to coat and cook for 5 minutes. Place the chicken on top and place the skillet in the oven. Cook for 10 minutes and remove from oven. Coat the chicken with mango sauce and place back in oven for 5 minutes. Remove and serve hot!
