I love hosting gatherings and cooking for people as you can imagine. I always have something on hand to make in a pinch in case someone drops by. I love little appetizers for this purpose! I received some healthy potsticker wrappers from Twin Dragon for recipe testing and decided to make up a perfect party recipe, but also one that could be frozen and kept on hand in a pinch. Enter these Cilantro Chicken potstickers!
I modeled this recipe after the cilantro chicken wontons from Trader Joe's which are usually in my freezer. They almost exactly matched it, but dare I say better since they are homemade and fresh! The garlic, cilantro and ginger really pop and the chicken and wrappers made it healthy. My cute little niece was my helper that day and the wrappers were so easy to work with.
These gyoza wrappers for potstickers are a staple you should have around. They also make eggroll and wonton wrappers too, which I will be showing off soon. Cilantro Chicken Potstickers
1 package Twin Dragon Gyoza Wrappers
2 tbsp. sesame oil divided
1 tbsp. avocado, grapeseed or olive oil
2 tbsp. sesame oil divided
1 tbsp. avocado, grapeseed or olive oil
1 lb. ground chicken
1 small onion, diced
1 teaspoon minced ginger (about 1/2 inch of knob)
3 cloves garlic, minced
3 tablespoons of soy sauce
1 teaspoon rice wine vinegar
3 teaspoons of yuzu hot sauce (see note)
1/4 cup chopped cilantro, divided
1/4 cup chopped green onion, divided
Heat 1 tbsp. of sesame oil and tablespoon of "regular"oil in a skillet on medium heat. Add onion, ginger, garlic and half of the green onion and cilantro and cook until onion is translucent. Add the ground chicken and cook and break up until chicken is cooked through and separated into small pieces. Remove the mixture to a bowl and add soy sauce, vinegar, hot sauce and the rest of cilantro and green onion, Mix together to combine. Place about a tablespoon or more of filling in center or gyoza wrapper. Fold up the sides and crimp the wrapper to seal and then twist to really seal. Heat the rest of the sesame oil in the same skillet and add about 8 potstickers. Brown on all sides. Add 2 tablespoons of water to the skillet and then cover with a tight fitting lid. Steam the postickers for 5 minutes. Serve with dipping sauce of your choice.
Freezing: Spray a baking sheet with nonstick spray. Place non cooked potstickers evenly on the sheet and place in freezer for a few hours. Slide the postickers off the sheet with a spatula and place in a zip top bag. Cook as instructed above.
Note on Yuzu Hot sauce: You can leave this out but it does not make it super spicy. I got mine at Trader Joes. You can sub an extra tablespoon each of soy sauce and rice vinegar and add a dash of hot pepper flakes to make up for it. But man the yuzu stuff is amazing!
