The finished product of this recipe is not pretty. But it is delicious and so easy. You buy things at Trader Joes, open them, place them in your slow cooker and set it and forget it. It is full of veggies, whole grains and flavor. What more could you ask for?!
You don't have to ave a Trader Joe's nearby to make this; you can find versions of all of the ingredients in any grocery store. I did not use the the Trader Joe's barley listed in the ingredients because I had some precooked barley in my freezer, but I know that works from previous endeavors. This is real nice with a squeeze of lemon and a sprinkling of parmesan cheese to finish.
Also, feel free to leave the meatballs out and use veggie broth and make this vegan. The veggies and barley are filling on their own! This is the perfect weeknight dinner! Set it and forget it! Full recipe to follow the montage.

1 bag fully cooked turkey meatballs
1 bag harvest hodgepodge vegetables
1 can fire roasted tomatoes
1 can chicken broth
1 package 10 minute barley
Salt and pepper to taste (a good bit)
Optional garnish: squeeze of lemon juice, Parmesan cheese, parsley, or green onions.
Combine all things in crockpot. Add water if it is not liquidy like the picture above. Cook on high for 4 hours or low for 8 hours. It won't look pretty but it tastes pretty. Garnish with whatever you are inclined to use. You can obviously sub non Trader Joe's items for all of this!
