I am still so pumped from our victory over alabama! I did nothing but watch football and recover from my cold all weekend, so back to the food!
This recipe was so nice I made it twice. And it is twice baked so it is twice the yummy! I was going over to my sister's house recently to drop off Bitsy before I headed to San Antonio. I decided to make them dinner to thank them for watching her. My Covey Rise haul had Delicata squash and broccoli in it that week and I decided to do a riff on twice baked potatoes with those items. I had some leftover bacon from another recipe and decided that would be a lovely addition.
Oh boy, this was so good! The texture is just like a potato, all for less than half the carbs and calories! The sweetness of the squash really compliments the salty savory tastes. I will be adding this recipe to my regular rotation for sure! Delicata squash are popping up everywhere now, so you have no excuse to skip this one! Full recipe after the montage.

Twice Baked Broccoli Cheese Delicata Squash
2 medium Delicata squash
1 head of broccoli, chopped into florets
1 1/4 cup shredded cheddar cheese, divided
1/2 cup sour cream
4 pieces of bacon, cooked until crispy and crumbled
1 tablespoon butter, melted
salt and pepper to taste
Chopped green onions for topping, if desired.
Preheat oven to 400. Cut squashes in half and place on a greased baking sheet cut side down. Roast for 20 minutes or until skin is very soft to the touch. Leave the oven on. Let the squash cool. Meanwhile, blanch the broccoli in boiling water for about 5 minutes until tender. Remove to an ice bath to stop the cooking process. When cool, chop into very small pieces. Scrape out the insides of the squash into a bowl and keep the shells in tact, do this carefully. Mix insides with 1 cup cheese, broccoli, sour cream, the melted butter and most of the crumbled bacon (save the rest for garnish). Season with salt and pepper. Stuff the mix back in shells and top with the rest of the cheese and bacon as well as green onions, if using. Bake for 10 minutes and broil until cheese is browned, if desired.
