Slow Cooker to the rescue! (Crock Pot Smothered Pork Chops)

I have made smothered pork chops before.  Apparently I really like collard greens because now, both times I have made it, it was with collard greens!  Work has been so crazy now that we are back in the office full time, so I do not want to stress out about dinner.  Enter this lovely crock pot recipe to save the day!

I had some homemade cream of mushroom, or maybe celery now that I think about it on hand.  Kevin has been asking me to cook with mushrooms more often because he loves them.  I went on a search with these items in mind and found this lovely recipe from Spend with Pennies.

Y'all, if the looks of this recipe don't entice you to try it, then take my word for it, the taste is divine.  So creamy and hearty, and perfect for a cold winter day.  If you don't like mushrooms, you can leave them out and use another "can of" soup.  The onions are what really make this,  Well, and the pork chops, and the gravy.  It is really something you need to make asap!  Full recipe to follow the montage.

Smothered Pork Chops in the Slow Cooker (Adapted from Spend with Pennies)

4 thick pork chops 
salt & pepper to taste
½ teaspoon paprika
½ teaspoon garlic powder
1/4 tsp or a sprinkle of cayenne (optional)
1 tablespoon avocado oil
1 small onion sliced
2 cups mushrooms sliced
1 can cream of mushroom soup (I made my own)
2 cups chicken stock

Preheat oil over medium-high heat. Season pork with salt, pepper, paprika and garlic powder. Brown pork on each side (about 3 minutes each side).
Remove pork, add stock to pan and whisk to release any brown bits in the pan.
Place onion & mushrooms in the bottom of the slow cooker.  Pour the pan sauce and soup over and stir to mix. Top with pork.  Cook on low 7-8 hours or until pork is tender. Serve over rice, potatoes or noodles or with collard greens like I did!
