Sometimes you can recreate magic! (Sausage and Brussels Sprouts Tomato Sauce)

Have you ever made a recipe and forgot to write it down?  I did this once; I was doing some day drinking and made us dinner after and was so enamored with it, I tweeted it.  If you check out my Twitter, you will know it must have been good because I do not tweet! I forgot what the ingredients were and wrote nothing down. I have been wanting to try and recreate it ever since and had the perfect chance to do so this weekend.  I received some Tresomega Nutrition Organic Quinoa Spaghetti to try and I knew this would be just the ticket.  And guess what?  It was!  I made it just as yummy as I remembered and the gluten free noodles made me feel great about having seconds!  

This pasta is Gluten Free and Wheat Free and ideal for celiac patients (like my mom) and those who have wheat related allergies.  It is an exceptional protein source for Vegetarians and Vegans and contains no cholesterol or trans fat.   Sounds delightful to me!  You can purchase these noodles at Sam's Club and find them on Facebook and Twitter.

But y'all, this pasta!  If you like Brussels sprouts, sausage, and tomato sauce on pasta, you are going to love this!  The flavors are so rich and salty!  You will love it and the leftovers are even better!  Try this, you will not be disappointed!  Full recipe to follow the montage.

Sausage and Brussels Sprouts Tomato Sauce with Tresomega Gluten Free Pasta

1/2 onion chopped
3 cloves garlic minced
6 oz. (half a bag) shredded or sliced Brussels Sprouts
1/2 lb. fresh sausage of your choice
1 tsp. red pepper flakes (optional)
Salt and pepper to taste
1 15 oz can diced tomatoes
1 tsp.  tomato paste
1 8 oz. pack pasta (I used Tresomega Gluten Free Quinoa Spaghetti)

Saute the onion in a tbsp of oil  on medium high heat until translucent.  Add garlic and cook 1 minute.  Add another tsp of oil and throw in Brussels Sprouts.  Stir and then let sit for 5 minutes to brown.  Crumble the sausage and add to to the pot, making sure it mixes well and gets into little pieces.  When browned, add tomatoes with juice and scrape up brown bits. Season with salt and pepper.  Reduce heat and let simmer while you cook pasta according to directions.  Mix 1 tsp. tomato paste and 1/4 cup pasta water to combine and add to sauce.  Drain pasta and if using gluten free, resist the urge to rinse.  Add pasta to sauce and stir to combine.  Plate and serve with shredded Parmesan and fresh black pepper.
