I don't think my mom actually reads my blog so I am going to drop a true tale here. (And Mom if you read it, comment!) We were gathering to celebrate my mom's birthday one Sunday recently and I decided to make a cake. I had some chocolate caramel pudding mix I picked up at Target on a whim and thought that would be good in a chocolate cake. And then I thought, ooh I love fall, I think I need some salted caramel in my life; I can incorporate that! I also had some festive fall sprinkles the kids could use to decorate the cake. It would be delightful! Until it wasn't.
My mom might not read my blog, but she does watch my insta stories and she saw my story of me making the cake. Unbeknownst to me after 38 years of being her daughter, it turns out she hates salted caramel. And apparently only really likes yellow cake out of the box with canned chocolate frosting that her mother used to make. And she made my dad text me to tell me so. The ending to this story is, I ended up making two cakes, one much more delicious than the other. I hope you aren't wondering which one, but if you are, it was the bundt. I can't not hear the lady saying bundt in My Big Fat Greek Wedding now.
Y'all this cake was so good! It was super moist from the pudding, the salted caramel was such a good addition and even though the kids went a little crazy, the sprinkles added a nice touch. You should totally add pudding to your cake mix, it is a dream. And glaze everything in this salted caramel, unless you are my mom of course! Full recipe to follow the montage.

Cake:
1 box Devils Food cake mix
I box instant Caramel chocolate pudding
1/2 cup oil
4 eggs
Mix all together and mix for 2 min (I used hand mixer). Pour into greased and floured Bundt pan. Bake 50-60 minutes (If you start smelling chocolate, check on it. It can burn the edges.) Let rest in pan 10 minutes. Shake pan to loosen cake before inverting on to a plate. Pour glaze over it.
Salted Caramel Glaze
5 tablespoons Butter
½ cup packed Dark Brown Sugar
⅓ cup Heavy Cream
1/4 tsp Salt
¼ teaspoon Vanilla Extract
⅔ cup Powdered Sugar,sifted
Mix all ingredients in a small saucepan. Heat on medium heat until butter is melted then turn lower to simmer, stirring frequently, for 5 minutes.½ cup packed Dark Brown Sugar
⅓ cup Heavy Cream
1/4 tsp Salt
¼ teaspoon Vanilla Extract
⅔ cup Powdered Sugar,sifted
