Five for Friday

Hey friends!  Happy Friday!  I am Linking up with Amanda for Friday Favorites and Tif/Katie/Caitlin/Della for High Five for Friday.  It has been a long week! Ready for an LSU bye week!

ONE:

Some friends and I caught the Girl on the Train last night at the fancy movie theater with wine and truffle popcorn.  I was surprised how much they changed it from the book.  I don't want to give too much away but seriously, if you saw it and read it you know what I mean!

Popcorn and wine! Two lovely things!
TWO:

I am officially moving this weekend, well the furniture moves Monday, but if we are friends on snapchat (missyquiggs) you got a semi sneak peak on what was happening.  Here is the new casa when you walk in the door!

I cannot wait to move in!
THREE:

I voted already!  I am not going to praise a candidate or tell you who to vote for, just vote!  I enjoyed voting on proposed constitutional amendments as much as I enjoyed pulling the lever for president. It is so cool that we get to do this and it really is not wrought with fraud (I had to show my license and conform my ballot) and we get to pick our leaders, decide important amendments and I got to pick which judge we have to face when we get sued! No politics pledge still in full effect, right?

FOUR:

I did not cook one thing this week.  It felt weird.  Do you have something like that which makes you feel weird when you don't do it?

FIVE:

I am going to the French Laundry when I visit Napa in December!!!  I cannot thank my beautiful friend Jen enough for planning this trip and getting us the reservation.  It is a foodie's dream and a food blogger's jackpot. I promise to document it well and tell you all about it.  What are my can't misses in Napa?

Well there you have it friends!  Have a great weekend!  What are you up to?  Halloween?  Enjoying the fall weather?

Happy Cooking!

Don't you try to change me woman! (Low Carb Buffalo Chicken Soup)

As you are probably aware I have a love affair with Buffalo Chicken flavors.  I have a Pinterest board dedicated to my obsession and I probably use buffalo sauce at least once a week.  Pinterest is now targeting pins at things you seem to browse a lot, a currently mine is full of rugs and buffalo chicken! Must be the moving!

This pin for buffalo chicken chili kept popping up in my feed and finally I clicked on it and fell in like.  I knew I could make a few changes to it and I could fall in love.  Disclaimer...don't use this method in real life, love everyone as you find them, don't try to change them!

So, I just changed this into a delicious soup not a crock pot chili.  There was no chiles in it or chili powder so that makes it not chili in my ex Texan cookbook.  And I only made it on the stovetop because had some unexpected spare time on my hands, but you are more than welcome to do the crock pot method according to the original recipe.

This was so delicious and I ate it over multiple days and did not get sick of it, the mark of a good keeper recipe!  Feel free to make it with my changes or follow the original recipe or heck, tweak it to your liking!  Full recipe to follow the montage.

Delicious, low carb and so reheatable!

Oktoberfest at your own house! (pretzel crusted chicken with arugula artichoke salad)

It is October and so many restaurants here are having Oktoberfest menus that make my inner German drool.  I saw this recipe for pretzel crusted chicken and just melted in my tracks.  I am a fool for arugula salads as well, so it was calling my name.

I was going to make a white bean puree instead of cauliflower to change it up a little and decided against it so I could use it in a forthcoming recipe.  The salad and chicken were enough for me though.  I decide to use my favorite pretzels, the buffalo wing flavored Pretzel Crisps so that I could enjoy the leftovers before they go stale.  I know, my buffalo flavor obsession is out of hand!

This was really good, the mustard egg wash really helps to keep the chicken moist.  I really hate that word, moist, by the way, so oogie.  I am glad I used the buffalo flavored pretzels, it really gave the chicken a nice kick,  but regular pretzels will be fine too, trust me.  The salad is so simple and delicious, I have made it previously for many people and it is always a crowd pleaser.  Make this! And make it with the cauliflower puree to round it out.  I have a couple of versions: here, and here with fanciness.  You will not regret it.  Full recipe after the montage.

I feel like this picture calls for a dijon pan sauce in hind sight!

Recapping the weekend, football bender

Hi friends, a little late posting today due to some logistics and Blogger app issues.  It was quite the weekend.  I need a break, but now the move starts, I cannot wait!  Hope y'all had fabulous weekends full of fabulous weather! I tried to document the weekend but I was kind of bad with my photos, here we go!

I started my Saturday at soccer to see my oldest niece play.  She scored two goals!

Then my pal Mel B. and I reunited for a football trip to Baton Rouge to see LSU play Ole Miss. While our trip to Wisconsin can probably never be topped, we had a great time and ended with a victory unlike when we traveled to Lambeau!
This guy only breaks out this stunning Starter jacket once a season,  This was the game.
The eight o'clock kick off was a bit late but beautiful!
As an avid recycler, I loved this!
We got there just in time for the pregame. It is a sight to behold.
They gave the East Side of the stadium some love at halftime, that is why it is upside down.  Love the Mike the Tiger!
We went to the Chimes after for a victory drink to wait out traffic.  Great music and everyone was in a great mood.  This season is really turning out well!

Sunday was coed book club (the men were invited to keep us tame) at my friend Kimberly's beautiful home.  She went all out.  We read The After Party and The Girl on the Train so there was lots of alcohol just like the books.
Just look at this bloody Mary!  That is homemade smoked redfish dip next to it.  So good!
Her husband made this amazing pork.  He sous vide the pork for 24 hours and then smoked it.
This is the money muscle,  It is so good.
We face timed with our member who has moved away and Kimberly brought out her mink to get us in the After Party mood.
Best Book Club ever!

It was a blast and I hope the guys had fun too.  The Saints game was on so they had that.  it was just like a junior high dance, the guys were on one side and the girls on the other.  How was your weekend?  Hope it was fun!  have a great week!

Happy cooking!

Five for Friday!

Hey my little chimichangas, it is Friday!  It has been a long week!  Linking up with the vacationing Amanda for Friday Favorites and Tif/Katie/ Caitlin/Della for High Five for FridayHere we go!

ONE:

Heading to Baton Rouge to see my Tigers play in person this weekend!  I only have five words:

Oh heck, I'll add three more.  "Geaux to hell"

TWO:

I am officially moving to my new pad on Halloween. I guess that means no plans for me, except ignoring trick or treaters and unpacking, hee hee.  What are you up to?  What are your costumes?  I want to live vicariously through you!

THREE:

My little angel got her hair did this week.  She was too cute not to share!  I love my little bratty rescue pup!
That scarf did not last long!
FOUR:
I really enjoyed this wonky report on the price increase in po boys over time. It is just in time for Po Boy Fest this weekend. They are delicious no matter what.  Like this one I had a few months ago.  I need another one in my life soon.  I will get one Monday and report back!

FIVE:

Are you watching Westworld on HBO? I am. It's good but I'm still only hooked because of my starting from the beginning. What's your take on it? Love it, hate it?

Hope you all have a weekend as fabulous as you are!  See you back on Monday with a recap of my shenanigans!

Happy Cooking!

Low carb and delivered to my door (Home Chef Skinny Mozzarella Chicken)

My roommate gets Home Chef once a week.  She was a traveling fool just like me this late summer and had a couple of meals in the fridge going bad that she offered up for the making. I took her up on it as I hate seeing food go to waste.  There were two choices and I chose the one that was more likely to go bad first, the Skinny Mozzarella Chicken with Garlicky Greens.

This was really good!  Due to user error, I had to chunk the spinach and use my own.  I should have chunked the basil because it was wilty.  But please know this box was on its way to the trash, it was nothing like my Blue Apron experience! But I will say, there were more steps, more processed ingredients and some changes I would have made to this.

Such as?  Garlicky means garlicky to me.  2 cloves of garlic does not equal garlicky.  I think I would have used olive oil or melted butter for crusting the chicken, it was a bit hard to coat and messy. Other than that, it was pretty easy, but I still prefer Plated.  Have you tried Home Chef?  Do you have any thoughts on it?  Again, I just used my roommate's box.  Home Chef did not send me this, I was not compensated in any way and all of these words are my own!  Full recipe after the montage.

That's a perdy low carb plate!

They come in twos, I have another review! (Plated vegetarian taquitos)

I showed you the other meal from my Plated box last week.  The second meal sounded really delicious too, vegetarian butternut squash tacquitos.  I decided to doctor this one up a bit to stretch it. I was having two of my Delta Gamma friends over and this meal was only for two.  I was very happy with the results!

I added a can of black beans for protein and sauteed the slaw since I am not a fan of raw onions.  I do wish I would have used the entire chipotle pepper, but I am not afraid of spice, you may not be.  This is a crowd pleasing vegetarian meal and very customizable.  You can add meat, you can top them with guacamole and sour cream, you can change up the slaw ingredients...shall I stop here?

Again Plated did not compensate me in any way and I paid for this box out of my own pocket.  All opinions are my own.  And my opinion is still that Plated is my favorite of the meal boxes I have tried.  So try them out, or at least try this recipe out on your own!  I definitely plan on making it again.  Full recipe to follow the montage.

I will admit I added some guac and sour cream after!

Recapping the Weekend, Suprise Party!

My plans were cryptic on Friday because we were throwing a surprise party for my mom's 60th Birthday!  It was Saturday night and she was so surprised.  I was kind of busy all night so low on pics but here's a slight recap!

My mom loves telling people "You rank" meaning you are awesome.  She deserved a great hashtag!
We set up a photobooth with all kinds of fun props.

My funny baby sissy made Cheryl memes too!
It was my grandmother's actual birthday so we sang to both of them.
My dad and his brothers clowned around in the photobooth.
And the pure barre girls ended the night with a plank off!

It was so fun to get together with family and friends and celebrate a great lady.  My sisters and I are a great party planning team, with the help of my mom's spectacular friends!

I somehow went to the Saints game the next day and partied some more. Luckily they repaid us with a victory!

How was your weekend?  Hope it was spectacular!

Happy Cooking!

Five For Friday

Happy Friday y'all!  Linking up with Amanda for a Friday post!  It has been a great week and should be an even better weekend!  Here we go!

ONE:

So,  I am a crazy LSU fan as you all know, and I am lucky to have THREE diplomas from LSU! What you may not know is that I went to the University of Southern Mississippi (USM) my freshman year of college.  I switched to LSU after because I made a bad choice for me.  Anyway, USM and LSU are playing this weekend!  I, of course want LSU to win, but it is fun to have two schools I went to playing each other!

And also R.I.P. to sweet Mike the VI, our live tiger mascot who lost his battle with cancer.  So glad they are honoring him this week!

TWO:

My sweet friend Amanda of a Brownie World wrote a post introducing me this week.  It was so sweet of her and I feel so honored! Go check it out please, and check out her hilarious blog!  We are kindred spirits with our sense of humor, love of working out and avoidance of carbs!

THREE:
I got to see my oldest niece play bounceball for the first time yesterday.  Bounceball, for the uninitiated, is volleyball, but letting the ball bounce before you hit it.  In the 6 year old league, there are no rules and therefore it is hilarious!  It was her last game of the season.  They, of course, all got trophies!

This was the gym where her mom and I first played too!
 FOUR:
UGH politics.  It is killing me this year.  And I usually love such things, I am a poly sci nerd.  This number is left blank for your safety.

FIVE:

I have some fun plans this weekend that I cannot share right now, but will have a full recap on Monday, I promise.  I know, I hate when people are cryptic like that too, but I promise you will see why on Monday. I mean it!

What are you up to this weekend? What were your highs for the week?  Lemme know! Have a great one!

Happy Cooking!

I tried it again to make sure I still liked it! (Plated Meal: Chicken and Brussels Sprouts Hash)

I decided to try Plated again since one of my friends sent me a coupon to get it at a discount.  I really enjoyed it the last time I made it and I wanted to see if it would hold up to the last experience.  I was also out of town for a long weekend and didn't have time to grocery shop, so it was a a win win.

I chose this recipe because it had one of my favorite things in it, Brussels Sprouts!  It also sounded very delicious.  And it was.  What I like best about Plated is that there are very few processed ingredients and it is mostly produce and protein.  And the directions are very easy to follow.  There are less fancy prep steps than the other services I have tried.  And by the way, I was not compensated in any way and that is my own opinion.  I just really like Plated, even if I am not their target market!

I will make this again, but cut down on the herbs, they were too much! I would have cut the herbs de provence in half and left out the sage.  I am a keep it simple stupid kind of person.  You should recreate this with those changes.  I had this for dinner and leftovers for lunch, it did not disappoint.  Full recipe to follow the montage.

Are you getting enough fiber? (Feel good, fiber filled roasted brussels artichokes and parsnips)

I was reading an article about how today's American diet does not give us all the nutrients that we need to keep a balanced healthy lifestyle.  It showed ways you could get those healthy nutrients through simple lunches.  I, of course, forgot to pin the article.  I should go back and find it, but researching obscure things is what I do at my real job, here it is all about the fun.

It reported that the easy way to get the right amount of fiber and something else that I can't remember was to roast three veggies together.  Those veggies were parsnips, brussels sprouts and artichoke hearts.  I am not sure if I need fiber, but I assume so since I eat no bread or brown rice these days. And why not, after my bender in Wisconsin, I needed some healthy in my life!

I decided to gussy them up a bit with a homemade red wine and mustard vinaigrette.  It really made them so delightful.  My receptionist was in the breakroom when I heated it up and she insisted on having a bite since it smelled so good and she didn't know what a parsnip was.  She was impressed and wanted the recipe.  Well lucky for all of us, here it is!

Roasted, delicious and full of fiber and nutrients!

Restaurant Review - The Caribbean room by John Besh

My "email" friends and I have all been friends with various members of our group for varying amounts of time.  I call them my email friends because we have a daily email that has been going for 10 years wherein we share snippets of our lives, funny stories, work drama and anything else on our mind.  We have been through breakups, babies. moves to new towns and back, parents having scary surgeries, horrible Tinder stories, you name it.  I cherish this group so much and am so lucky to have these ladies in my life.

Back when we were younger we used to go out drinking on school nights, go on beach trips and have a fabulous event called "Faux Thanksgiving." Now life gets in the way and we don't see each other as much, but we always try to schedule some face time here and there.  One such time was two weekends ago when we visited the Pontchartrain Hotel for an evening of cocktails and dinner at the Caribbean Room..  This old gem was reopened recently after being closed since 1994.  We were so excited to try it!

They gave me a dark napkin since I was wearing a dark dress, such fancy service!
I loved the old school looking menu!
We had an amuse bouche from the chef.  That is tomatoes, not tuna.  I was hoping it was tuna!
Crab Remick.  Very good, and served in a seashell, how appropriate for the theme!
Crispy Oysters with bacon jam, blue cheese, jalapeno sriracha.  So good!
Caramelized Goat Cheese Agnolotti with baby lima beans and herb broth.  This was probably my favorite thing!
I just love the fancy silverware!
I got the Rabbit and Dumplings with parsnips, rutabaga and lemon gnocchi.  That broth! God lawd it was delicious, must have been cooking it all day!  Most of the table got this too.  The other hit entree was the filet of beef.  All raved!

We all split the mile high pie for dessert.  We were sure it would be enough for all of us.  It was. I love my friends' faces!

The chocolate poured table side was just the right touch!
So lucky to have these great ladies in my life.  10 years and counting!
This was such a fancy dining experience and I am glad I got to try it.  I think they still have a few kinks to work out with their service, but the food as a whole was good.  I don't usually go out and have over $100 worth of fun on just myself so not sure I will be back unless it is a special occasion of sorts.

Happy Cooking!

Recapping the weekend-No football, no problems

Hey friends!  How are ya!  Hope you had fabulous fall weekends!  Hope all my east coast friends are fine after Hurricane Matthew.  Both my college and NFL team did not play this weekend, which has not happened in forever.  Lucky for me, as I had a lot to do.  Because I am moving, again!  I know, didn't I just move?  I found the most amazing rental house by chance and it checked every box on my list, including a hard location that never has rentals open.  I knew I would need my own place at some point again and could not pass it up, so I pulled the trigger.  At least I won't be moving in July this time!  Let's get to the weekend!

Friday I got my hair did.  It was not as dramatic as I thought it was going to be, but I love it!
I then had a lovely evening of wine, billiards and conversation with some new friends.  There was an awesome crab dip I meant to get the recipe for and forgot :(
Saturday I went and checked out Gentilly Fest.  It was lovely, but so hot!  Had some BBQ and fun times at a non crowded fest, which never happens!
How funny would my four pounds of fury look in one of these?
Saturday night I had a night with my nieces.  We went a different route than usual, we tried to reinvent Jen's chocolate mice instead of making mug brownies.  They were a disaster to make with a 3 and 6 year old, but tasted so good!

I love making food with my girls!
They didn't look spectacular but they tasted good!
We had a mean game of frog darts.  Then I lost at Monopoly Jr. and Go Fish.  What a night!
I made myself a yummy welcome here fall salad Sunday.  Brussels sprouts, green apple, carrots, craisins, almonds and chicken, yum!
Lots of packing happened in advance of the move.  I am really excited about the new house and having my own place again that is not a basement!

How was your weekend?  Hope it was grand! More yummy food to come tomorrow!

Five For Friday-Weather induced free time

Hey y'all!  I am linking up with Amanda for Friday Favorites and Tif/Katie/ Caitlin/Della for High Five for Friday! I am ready for the weekend!  We had an event planned to raise money for Hogs for the Cause during the LSU/Florida game.  The game is cancelled and so is our event because of the hurricane.  Hope all my Floridian friends stay high and dry.  This storm looks like no joke.  I hate it! In any event, here we go!

ONE:

These people must have been inspired by Harry Potter, but clearly didn't get the message of the books!

TWO:

As a person who thinks clowns are creepy this is just, well, creepy!

THREE:

Ain't nobody got time for that! These cooking projects make the food blogger in me cringe!

FOUR:

I got invited to the sneak preview of the Nordstrom Rack opening here in New Orleans!  I assume it is because I am a cardholder, but who cares how?! I love me a Nordstrom in any form! It is two stories, chock full of great deals and I cannot wait to go back and shop again!

FIVE:

Getting my hair did today!  Trying something new, balayage highlights!  I got inspo from this pin.  I can't wait to see how it looks!

Well that is what I have, what are you up to for the weekend?  Let me know!  Have a good one!

Happy Cooking!
