You may think the title of this post is hyperbole, but it is not. You need to run, not walk to your kitchen and make them. Gentleman Caller and I were so blown away by these tasty carrots!
I have been depriving myself from red meat and was craving some. My sister and I split a flank steak from Costco like we are wont to do and I looked for a recipe for said steak that was new and blogworthy. I found this recipe for harissa rubbed steak and carrot salad from Eating Well and thought it would be great, especially since I have harissa in my pantry.
While the steaks were pretty good after I heavily doctored the recipe to add more flavor; the carrots were so good we were literally licking our plates. The smoky spices do wonders to pair with the sweet carrots to dance a jig in your mouth. I will be making these for Thanksgiving next year, they just scream fall!

2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1½ teaspoons ground cumin
½ teaspoon ground cinnamon
½ teaspoon smoked paprika
1/2 teaspoon Aleppo pepper (see note)
¾ teaspoon kosher salt, divided
3 cups thinly sliced carrots (about 1 pound)
1 tablespoon chopped fresh parsley or cilantro for garnish
Alternative really easy method:

3 cups thinly sliced carrots (about 1 pound)

Whisk lemon juice, oil, garlic, cumin, cinnamon, paprika, aleppo and salt in a medium bowl. Steam carrots over 1 inch of boiling water in a large saucepan fitted with a steamer basket until tender-crisp, 2 to 3 minutes. Toss the carrots with the spice mixture. Garnish with cilantro or parsley.
Alternative really easy method:
Whisk lemon juice, oil, garlic, cumin, cinnamon, paprika aleppo and salt in a microwave safe bowl. Add carrots; stir to coat. Cover and microwave on High until the carrots are tender-crisp, about 2 minutes. Uncover. Garnish with cilantro or parsley.
