Easy cheesy and one pan to clean! (Cheesy Zucchini Beef One Pan Casserole)

Oh Man.  I wasn't going to blog about this one since I was just cleaning out the kitchen, but I had to after I looked at it right out of the oven.  Who was I kidding, melted cheese always needs sharing!  

I was originally going to just make zoodles and meat sauce, but improvising made this super delightful.  Sauteing the zucchini onion and garlic gives this so much flavor.  And again, melted cheese!  

So make this, you will not regret it.  Super easy make it your own!  Try it with turkey, use squash or cabbage or greens instead of zucchini.  What changes would you make?  Full recipe after the very short montage.

Zucchini Beef One Pan Casserole (serves 4)
salt and pepper to taste
1 tbsp. oil or fat
2 zucchini sliced into rounds
1 small onion, chopped
4 cloves garlic, minced
1/2 pound ground beef
1/2 jar marinara sauce
1/2 cup mozzarella cheese
1/4 cup grated parmesan cheese

Preheat oven to 350. Heat oil in a cast iron skillet. Add zucchini and onion and cook until they begin to soften, 7-10 minutes.  Add garlic and stir around and push to one side.  Add the ground beef to the empty side and let cook for 4 minutes.  Stir and break up and then mix with veggies.  Pour marinara over the mixture and try and to mix it without being too messy.  Place in hot oven and cook for 10 minutes.  Remove and heat broiler to High.  Pour cheese on top and place under broiler until cheese is brown and bubbly.  This will be anywhere between 2 and 10 minutes depending on your oven.
