Tuscan Chicken Noodle Soup

Y'all know I am a little to no carb person. But, sometimes you have to have your carbs!  I was given some Fortune® Udon Noodles from JSL Foods to try for some soup experimenting and I was excited to have some noodles in my life.  I went over to to JSL's facebook page for inspiration, but wanted to go a different route than Asian flavors and step out of the box.

I have a lot of cookbooks and I love reading through them and getting inspiration.  I used to make a Chicken Capellini soup many moons ago from one of them and I hadn't made it in ages.  I have more adult flavors in my life now, so I decided to gussy it up with these fresh noodles and a whole new inspired recipe.  

Well this was a delightful bowl of comfort and I will be certainly making this again soon.  The flavors are so rich and the noodles just soak them up beautifully. And y'all these noodles are a powerhouse! They are shelf stable, have only four ingredients, and are a good source of those hard to get Omega 3's.  I need those as a non fish eater! It feels good that they are made in the U.S. and are transparent about their ingredients!

Tuscan Chicken Noodle Soup With Fortune® Udon Noodles

1 lb. boneless skinless chicken thighs

Juice and zest of one lemon

1 tbsp. fresh thyme (or 2 tsp. dried)

2 tbsp. olive oil

3 cloves garlic chopped

1 small onion, chopped

1 large carrot, chopped

2 cups chicken stock

1 cup white wine

1 can fire roasted diced tomatoes

1 bunch of kale or Swiss chard, torn from woody stems and torn into pieces

1 pack chicken flavor Fortune® Udon Noodles

Salt and Pepper to taste


Combine the chicken, lemon and thyme in a bowl. You can refrigerate this overnight to impart more flavor. Add the olive oil to a Dutch oven or soup pan over medium heat. When it is hot, add the carrots and onion to the pot and cook until onion is translucent, about 5 minutes. Add garlic and sauté for two minutes; then add chicken pieces and sauté to get browning on it. Pour the contents of the flavoring packet of the Fortune® Udon Noodles over the mixture and toss to coat. Pour the wine and scrape up any bits on the bottom. Add broth and tomatoes and bring to boil, add salt and pepper to taste. Add the kale or chard to the pot and stir. Lower heat and simmer for 10 minutes or until the kale or chard is tender. Add in the Fortune® Udon Noodles and turn off the heat. Allow to sit for 5 minutes and then serve in bowls and top with Parmesan cheese.
