Whenever I get the email telling me what will be in my share from Covey Rise Farms each week, they always add in a few recipes for that is in the share. This is one of them and as usual it was delightful. What can beat fresh, homemade salad dressing? Not much I can tell you!
This is so great. A combination of fresh herbs, pungent apple cider vinegar, and spicy mustard that really comes together in a creamy combination. This is a perfect dressing with any salad, my coworker and I both used it the week I made this with our respective favorite salads and both loved the taste. If you aren't lucky enough to have green garlic, try this with regular garlic, it will be great! Make this, or any homemade dressing, they are the best! Linking up for Meal Plan Monday.

CREAMY GARLIC SALAD DRESSING
1/2 cup extra virgin olive oil
1/4 cup apple cider vinegar
1 tbsp green garlic, chopped (or use 3 cloves regular garlic)
3 tbsp fresh lemon juice
2 tbsp chopped fresh parsley
1 tsp. salt
1/2 tsp Dijon Mustard
1 tbsp honey
Place all ingredients in blender and blend on medium high for 30 seconds or until well mixed. Store in airtight container in refrigerator. If dressing solidifies when cold, let sit at room temperature until liquid.
