Easy and unusual (Hummus dinner bowls with Crispy Schwarma Turkey)

I always get great recipe ideas from Epicurious.  I should make them their own pin board!  I pinned a recipe for hummus dinner bowls and decided to riff on it and use ground turkey since I have to watch my cholesterol.  Ground turkey is hard sometimes, but with the addition of rich spices and a crispy crust, you will love turkey.  I would just suggest you use dark meat, aka some with a little fat.

I told you about the hummus yesterday, and it was very yummy in this dinner bowl.  I loved the tomato and arugula salad on top!  I heated the tomatoes up a bit so that they would wilt the arugula.  You can add on to this salad and put cucumbers or olives or artichokes in it, make it your own!

Hummus Dinner Bowls with Crispy Schwarma Turkey (Adapted from Epicurious)

1 Tbsp. vegetable oil
1 lb. ground turkey
2 tbsp. Schwarma Spice mix (see below)
1/2 onion chopped
2 cloves garlic, chopped
1 pint cherry tomatoes or 2 medium heirloom or beefsteak tomatoes, cut into 1" pieces
1 cup parsley or Arugula, coarsely chopped
1 Tbsp. fresh lemon juice
1 batch Easy Canned Chickpea Hummus
Extra-virgin olive oil, lemon wedges, Aleppo-style pepper, hot sauce, pickled veggies, and pita for garnish

Heat oil in a large heavy, preferably cast-iron, skillet over high. Pat turkey dry with paper towels, then press into an even layer in skillet with a spatula. Season with schwarma mix and cook, undisturbed, until a brown crust begins to form underneath, about 6 minutes. Add onion and garlic and mix, breaking turkey into pieces, and continue to cook, stirring, until onions and garlic soften. Meanwhile, toss tomatoes (you can heat them up in the turkey skillet if you want a little more flavor), parsley or arugula, lemon juice, and 1 tsp. salt and pepper in a medium bowl.  Divide hummus among bowls or plates. Using the back of a spoon, smooth into an even layer, then create a wide divot in the center. Spoon spiced turkey and tomato mixture over, then drizzle with oil and sprinkle with Aleppo-style pepper, if using. Serve with lemon wedges, hot sauce, pickled veggies, and pita alongside, if using.

Schwarma Mix:
3 tbsp ground cumin
2 tbsp ground turmeric
1 tbsp. sweet paprika
1tsp granulated garlic
1/2 tsp hot paprika
1/4 tsp. cinnamon
1 tbsp allspice

Combine all spices well.
