When it is Jazz Fest time, I always break out the crock pot. It is a long day of drinking and dancing in the hot sun, and I always have hungry folks clamoring for some food when we get home. I decided to try something new for the first day of Jazz Fest when my sister, brother in law and some friends always come with me. I got some chicken on super sale, bought the wrong dressing for my weekly salad and someone left some jasmine rice at my house a few weeks back. I also had some Costco artichokes burning a hole in my pantry; a plan came together.
I wasn't sure this was going to work; but it did and it was splendid. My sister was a little tipsy, but she said it was one of the best things she has ever eaten. We are both prone to hyperbole, but I will tend to agree with her, this was so delicious! The rice was fully cooked, there was a bit of a crust forming and it has so much flavor! A real stick to your ribs meal.
Make this! You will love it. It is so easy and you can even add more veggies to it. I bet some kale would be real nice in there. Do you love a good dump meal? What are some of your favorites? Full recipe to follow the montage.

Chicken, Rice and Artichoke Crock Pot Dump Meal
One onion, chopped coarsely
Family pack of boneless skinless
chicken thighs
One bottle roasted garlic
dressing or any other creamy dressing (I used Opa! Greek Yogurt Dressing)
1 cup jasmine rice
One large (16 oz) container of
marinated artichoke hearts
2 cups chicken broth
Juice of one lemon
Spray the crock part of your slow
cooker with non-stick spray. Add onions
to the bottom. Season your chicken with salt and pepper while still in the package. Place the chicken seasoned side down on top the onions and then season with salt and pepper. Pour
dressing over chicken. Pour rice next,
then artichokes and chicken broth. Use a
wooden spoon to make sure everything is evenly distributed. Cook on low for 8 hours. Remove cover and sprinkle with lemon
juice. Enjoy! Optional: top with chopped green onions, chopped parsley or parmesan cheese.
