Do you have any comfort food recipes that you never had growing up as a child? I have a lot as my mom was mostly a Rice a Roni and shake and bake cook. (you feel my pain fellow children of the 80's!) Although her red beans are my favorite! When I got into college and law school, I got hooked on southern classics like collard greens, okra and smothered chicken to name a few. And this awesome way to make green beans I have for you today.
My sister makes this recipe a lot and she uses ham, or just a ham bone. It really does fill you up like a meal, and you can bulk it up further by adding some cubed potatoes, which I have done before. The texture of the green beans is amazing, still a little crisp, but soft at the same time. And your pork or ham is fork tender and melts in your mouth. Chop your onions in a large manner. |
Cut your protein in a similar manner |
Add the onions and beans to the crock pot |
Then add your meat and stock. Then set it and forget it! |
A few hours later, you have deliciousness! |
1 large yellow onion, thickly sliced
3 cloves garlic, minced
2 pounds fresh green beans, trimmed
1 cup chicken broth
2 pounds fresh green beans, trimmed
1 cup chicken broth
1 lb pickled pork or ham, cut into cubes
salt and black pepper to taste
Turn crock pot to low and set for 6 hours. Add onion and garlic, then green beans and meat. Pour broth over and cover. Enjoy 6 hours later!
