Ah, oatmeal. Y'all know I love it. But it is so bland by itself. New ideas are always necessary to get those super healthy flakes in my belly. I decided to find something new and different and stumbled upon a recipe for Apple Crisp Oatmeal squares over at Chocolate Ex Diaries. It seemed delicious and portable, so why the heck not?
Well it certainly was delicious and portable, but I made some tweaks as I tend to do that ensured that; specifically doubling the topping. These were so good! The crunchy top really contrasts with the soft base and the apple flavor is really spot on.
Try these, your heart and tummy will thank you! And feel free to use applesauce for the bananas (about 3/4 cup) or regular dairy milk. Full recipe to follow the montage.

Oatmeal base
2 cups rolled oats
1 cup unsweetened almond or soymilk
2 large ripe bananas, mashed
4 tbsp pure maple syrup
Middle
1 apple (I used honeycrisp) sliced very thinly
Topping
1 1/2 cups oat flour (you can just put oatmeal in the blender to make this)
1/2 cup quick cooking or old fashioned rolled oats
1 tbsp stevia
3 tbsp coconut sugar
6 tbsp neutral oil
Preheat oven to 350. In a large mixing bowl, add in oats and milk and let soak while you mash your banana until little or no lumps. Add in your bananas and maple syrup. Mix until well combined and set aside. In a medium mixing bowl, combine all dry ingredients for your topping, add in your oil and stir until equally moistened. Grease or spray a large baking dish to coat and pour in your oatmeal base. Smooth the top. Slice your apples and arrange on top of the oatmeal base. Using a spatula, gently press the apples into the oatmeal base. Pour your topping over the apples, covering completely, press down and smooth the top. Place in preheated oven for 42 to 45 minutes. The top should be light golden brown, if not, throw under the broiler for 3 minutes.. Let cool for it least 5 minutes before slicing them. Keeps fresh covered in the refrigerator for a week. You can also freeze them individually for a few months.
