I am the queen of clean out the fridge recipes, I love making something out of what I have on hand! I had some flank steak and sweet potatoes lying around. I thought about making something yummy I had made before, but hello, I'm a food blogger, let's get creative!
My sweet friend Annie was emailing me a recipe she had made with spiralized sweet potatoes and I was intrigued. I have really only had zoodles and this sounded like the perfect veggie with which to branch out with my spiralizer. I looked in my pantry, brainstormed and came up with a one skillet Mexican flavored meal. Since I made it up in my head, it took me forever to shoot this and write it up because when I cook on the fly, I never measure and just throw things together. This is not good for you gentle reader, because you are going to want to make this one yesterday!
Sweet potato noodles are now my jam! This skillet was full of flavor, filling and just so darn pretty. Plus just one pan to clean, and it's cast iron, so you barely clean it! The crunchy jalapenos are so good on top, but you can substitute regular jarred ones, crispy onions or just leave them out if you can't find them! And if you don't like cilantro, well I just don't understand you, but go ahead an leave that out too. Full recipe to follow the montage. I tossed my steak in some taco seasoning. You can use ground meat or chicken too! |
Saute up the onion and garlic |
Add in your meat of choice. |
Remove the steak and then add those glorious sweet potato noodles! |
Add in the tomatoes and green chiles. These are summer tomatoes I froze! |
Add the meat back in and then flatten it all out! |
Top with the goodies and then let the cheese melt. You can broil it if you want as well. |

2 small sweet potatoes
one small onion chopped
three cloves garlic, minced
1/2 pound flank steak cut into bite size pieces (can sub chicken or ground meat/turkey but see notes)
1 15 oz can diced tomatoes
1 small can diced green chiles
1 packet taco seasoning
1/2 cup cheese
1/4 cup cilantro chopped (will be about a tbsp)
3 green onions sliced
1/4 cup crispy jalapenos I used this kind
Use your spiralizer to spiralize the sweet potatoes and set aside on a napkin to drain. Saute onion and garlic over medium heat in a cast iron skillet. Add in your meat and cook until almost done and remove it. If you are using ground, go ahead and cook it through and leave in the pan. Add the sweet potato noodles and cook them for about 3 minutes, add the tomatoes and chiles and cook for another 3 minutes. Add the meat back in and smash everything down to be a single layer. Cook for 7 minutes, stirring and resmashing twice. Add your cheese and garnish and continue to cook until cheese is melted, or place under a broiler to make the cheese bubbly. Enjoy!
