A chaotic Friday recap (puppyroni pizza and cupcakes with Sue Sue's cream cheese icing)

I love cooking with my niece, Katey Kakes.  She is growing up into a sassy little lady and I am enjoying it so much.  She loves to help in the kitchen whenever possible, so hopefully that means she inherited the love of cooking my sisters and I have.

This Friday I babysat my two nieces and we made our usual, puppyroni pizzas and dessert, which must be chocolate.

The pizzas for the girls turned out great.  Mine as usual had some problems.  I need to get myself a proper pizza peel in the near future, I ruined a perfectly good hawaiian pizza!


The real stars of the night were chocolate cupcakes with my Aunt Sue Sue's cream cheese frosting/icing.  I never know what the proper term is!  I had made it a few months ago with some carrot cake and it was just sitting in my freezer waiting for a day like this!

The cupcake ingredients 
Mix dry ingredients in a bowl
Beat butter and sugar together
Chaos ensued and another pic was not taken until they were almost done.  Man kids are active!
Part of the chaos, someone had a little too much fun with the blue sprinkles and had to clean up a mess.
Sprinkle Sparkle!  Aunt Missy should have put down a paper towel!
You would think this was enough...

The rest were left un sprinkled as they were for an adult pool party the next day...
Or for grandpa to have 4 after dinner!

Chocolate cupcakes:
Ingredients
1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
3/4 cup unsweetened cocoa powder
1/8 teaspoon salt
3 tablespoons butter, softened
1 1/2 cups white sugar
2 eggs
3/4 teaspoon vanilla extract
1 cup milk

Preheat oven to 350. Line a muffin pan with paper or foil liners. Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 3/4 full. Bake for 15 to 17 minutes or until a toothpick inserted into the cake comes out clean. Frost when cool.

Aunt Sue Sue's Cream Cheese Icing:
1 8oz cream cheese
1 stick butter
1 box powdered sugar

Mix cream cheese and butter in or with a mixer. Add sugar gradually.
(seriously, that's it!)


Bonus recipe: Brownies in a mug (I split the ingredients and put in two mugs for the two girls)

Ingredients:
2 tablespoons of butter
2 tablespoons of sugar
1 firmly packed tablespoon of light brown sugar
¼ teaspoon of pure vanilla extract
Pinch of kosher salt
1 egg yolk
4 tablespoons of flour
1 tablespoon of unsweetened cocoa powder
2 heaping tablespoons of semi sweet chocolate chips


Melt butter in microwave safe mug or ramekin for 30 seconds to melt. Stir together butter, sugars, vanilla and salt. Stir in egg yolk. Add flour and cocoa powder and stir again until well combined.  Finally, add chocolate chips. Cook for about 45 seconds in microwave.
