It takes a village (Slow Cooker Healthy Chicken Cacciatore)

My cousin Chelsea lives in LA, as in Los Angeles.  She is too cute and sent me a recipe a while back that she had made for dinner for herself and her man.  I pinned it and forgot about it.  Now that I have photography class on Wednesday nights, that is a night I desperately need a slow cooker recipe I can eat before class in a rush or I will resort to picking up Bud's Broiler  (#4 with hickory Sauce) on the way home after class like a ravenous fool.

I also have been on a weight gaining spree and needed to slow my roll and get back to my little to no carb lifestyle.  This recipe was perfect for that goal as I would just serve it as is with no rice or noodles, kind of like a soup.  I added some of those marinated veggies from Costco I like to add to everything and they were an excellent addition!  Try this, it is really good, lots of depth of flavor, set it and forget it and healthy!  Everyone wins!  Full recipe to follow the montage.

Add all of it in

And stir it all up and set it to low for 7 hours.  That is, if you have auto shut off.

And then when you get home, you have this!

Add some cheese if you please!  And enjoy! No noodles needed!



Healthy Slow Cooker Chicken Cacciatore (Adapted from Lauren Gleisberg)
Ingredients:
-2 large boneless skinless chicken thighs
-1 medium onion (chopped)
-1 pound fresh mushrooms
-2 cloves garlic (minced)
-1/2 cup chopped marinated artichoke hearts
-1/2 cup chopped roasted red peppers
-1/4 cup flour 
-1 cup low sodium chicken broth
-2 tbsp tomato paste 
-14 oz can diced tomatoes-drained (I used fire roasted)
-sprinkle of herbs (I used fresh rosemary)
-sea salt and pepper to taste
-fresh grated Parmesan cheese for topping

-Add chicken to Crockpot first
-Top with remaining ingredients and stir
-Cook on high for 4 hours or on low 7 hours
-Sprinkle with cheese and serve alone or over noodles of your choice.
