Portable, Healthy and Awesome (Healthy Breakfast Power Muffins)

I love getting ideas from other bloggers and making them myself. Today we have power muffins from Life According to Steph.  She is a bad ass lady that does what she wants and I love her truth telling.  And she makes a pretty good healthy breakfast muffin!   I used almond milk in these and they were just fine, and used Better'n Peanut Butter from Trader Joe's to make them a little less in fat and calories since I was having carbs. I also used turmeric because I like that weird addition. These are portable, and in my opinion, delightfully delicious.  I suggest popping one into the microwave for 30 seconds before eating, it is divine.

Healthy Power Muffins (borrowed from Life According to Steph)

Ingredients
2 cups whole wheat flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp turmeric (optional)
2/3 cup old fashioned oats
1/3 cup flax seed
1 tsp vanilla
1 cup brown sugar (not packed)
1 cup creamy peanut butter
2 bananas
1 cup of applesauce
2 eggs
2/3 cup milk (I used almond, any kind will work)
3/4 cup chocolate chips

Preheat oven to 350. Line muffin tins with liners.  Mix all ingredients up to vanilla, Mix well and set aside. Add vanilla through milk to a separate bowl, and mix with a hand mixer until well-blended. Mix in dry ingredients with spoon, add chocolate chips (more or less to your liking). Fill muffin tins 3/4 of the way. Bake 15-20 minutes depending on your oven. Recipe makes 23.

You can flash freeze the baked muffins and store them in a bag in the freezer.
